Egg and Milk Free Dips:
Creamy Onion Dip
Serve with chips or cut-up fresh vegetables.
1 batch tofu sour cream
* Homemade Tofu Sour Cream
In a blender, combine a 12 ounce package silken tofu (about 1 cup) with 1 Tablespoon plus 1 teaspoon vegetable oil, 2 Tablespoons lemon juice, and a good dash of salt.
1 package instant onion soup mix
1. Combine ingredients in a bowl. Let dip chill in refrigerator for about an hour, or until flavors are blended and any onion pieces in the soup mix are soft.
Variation: For Onion-Spinach Dip, add Ð'Ð... to 1 10 ounce package frozen spinach (thaw and press water out first).
Basic Bean Dip
15 ounce can black, pinto or white beans, drained
2/3 cup salsa
Dash of cumin
1. Combine ingredients in a food processor (or use a potato masher to mash and combine in a bowl). Scoop into a bowl and serve with tortilla chips. Serves 4 to 6.
Variation: For Cilantro White Bean Dip, use white beans, skip the salsa, and add a little fresh chopped cilantro and a squirt of lemon juice.
Baking Without Eggs
Baking without eggs can be a little tricky, because eggs do several important things. For one thing, they provide leavening, which means they make things rise. They also provide binding, which means they hold things together. They also add some liquid. So if you're leaving out the eggs, you have to find something else to do all of those things.
